Dahi Bhat

Dahi bhat:
It’s a regular and regional meal almost done once in a week at my house. Having curd rice helps in digestion, provides energy and also help one in calming down in stress.

Ingredients:
Cooked rice 2 vati ( soft rice ) , onion 1 medium, dahi 1 vati ( not too sour ) , milk 1/2 vati, urad dal 1 tsp, red chillies 2, mustard 1/2 tsp, cumin1/2 tsp , ginger grated 1/2 tsp, curry leaves, asafoetida, salt little, sugar pinch , ghee 2 tbsps .

Mix rice , finely chopped onion , curds and milk , a pinch of salt in a bowl .
Check the consistency it should have a liquid texture to it ( since it thickens later and may become to dry to eat. )
If needed add curd or little more milk . Keeping in mind the required consistency.

Place grated ginger on top of curd rice.

For tadka - heat ghee or oil to the right temperature add urad dal and sauté , now add mustard, cumin, curry leaves and finally the red chillies and asafoetida. Once you have tossed well pour the tadka over the ginger and then mix well.
The ginger will get blended with tadka and add a flavour to the rice.
Finely store it in fridge for 2-3 hours
And serve preferably on a banana leaf and avoid using spoon to eat.
Serve it with pickle of your choice - May be sweet, sour or pungent. To complete the meal add a fried papad .

TIPS:

Adding cream to this dish makes it creamy and less sour. sourness in this should be mild.

This could be best meal to beat the October heat or summer time.
For a day when you don’t want to eat too much yet avoid starving this rice would have soothing effect on your mood swings.
